6 POTATOES, PARED, QUARTERED
1/3cGRATED PARMESAN CHEESE
1/3cFLOUR, UNSIFTED

1. IN A PREHEATED 375 F. OVEN, MELT BUTTER IN A JELLY ROLL PAN. TILT PAN TO COAT BOTTOM WELL. SET ASIDE. 2. PEEL POTATOES AND CUT INTO QUARTERS LENGTHWISE. SET ASIDE. IN A LARGE PLASTIC BAG, COMBINE CHEESE, FLOUR, 1/4 TEASPOON SALT, AND 1/4 TEASPOON PEPPER. ADD POTATOES AND SHAKE TO COAT WELL. PLACE POTATOES INTO THE BAKING DISH AND BAKE FOR 1 HOUR, TURNING MIDWAY THROUGH THE COOKING.
